Irish Beef Stew
A hearty and flavorful Indian-inspired beef stew made with tender beef, charred spices, and a hint of zesty flavor. Perfect for a chilly evening.
Ingredients
- β1 pound beefcut into 1-inch cubes
- β2 inches zesty gingerpeeled and sliced
- β1 tablespoon charred cumin seedstoasted
- β1 cup irish stoutbeef broth and stout
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tablespoons tomato pastedried
- β2 tablespoons all-purpose flourfor thickening

Heat oil in a large Dutch oven over medium-high heat. Add the beef and cook until browned, about 5 minutes.

Remove the beef from the pot and set aside. Add the cumin seeds and cook for 1 minute, until fragrant.

Add the onion and garlic to the pot and cook until the onion is translucent, about 5 minutes.

Add the ginger, tomato paste, and flour to the pot. Cook for 1 minute, stirring constantly.

Add the stout and beef broth to the pot, scraping up any browned bits from the bottom.

Return the beef to the pot and bring to a boil. Cover the pot and transfer to the oven.

Bake for 2 1/2 hours, or until the beef is tender.

Season with salt and pepper to taste. Serve hot, garnished with fresh cilantro if desired.
