Spotted Dick Pudding with Fennel
A traditional British dessert with a hint of anise from fennel. A moist and flavorful pudding.
Ingredients

- ●1 cup dried fruit (currants, raisins)
- ●1 tsp fennel seedsoptional
- ●1 box spotted dick mix
- ●4 tbsp butter

Preheat oven to 375°F (190°C).

Grease a 9x5-inch loaf pan and set aside.

In a large bowl, whisk together flour, dried fruit, and fennel seeds (if using).

Add the spotted dick mix and stir until combined.

Add the butter and mix until the mixture forms a crumbly dough.

Transfer the dough to the prepared loaf pan and smooth the top.

Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool on a wire rack for 10 minutes.

Transfer the pudding to a serving plate and serve warm, dust with powdered sugar (optional).
