Brazilian Beef and Zesty Bowl
A vegetarian twist on traditional Brazilian beef dishes, this zesty bowl is a flavorful and colorful meal.

- β500g Brazilian zesty riceUse leftover rice if you can
- β1 large cup Roasted vegetables (bell peppers, onions, carrots)Choose your favorite colors
- β250g Black beansCanned or cooked from scratch
- β100g Chimichurri sauceHomemade or store-bought
- β1 large Sliced avocadoMash or slice as desired
- β2 Fried or poached eggOptional
- β1 tsp Red pepper flakesFor added heat
- β1/4 cup Chopped fresh cilantroGarnish
- β2 Lime wedgesServe on the side

Cook the Brazilian zesty rice according to package instructions or leftover leftovers.

Preheat your oven to 220Β°C (425Β°F) and roast the vegetables with a drizzle of oil until tender.

Heat the black beans in a pan with a splash of water until warm.

Mix the chimichurri sauce with red pepper flakes and adjust seasoning.

Assemble the bowls by dividing the rice among plates, topping with roasted vegetables, black beans, sliced avocado, and a fried or poached egg (if using).
