Chicken alla Cacciatora
A classic Italian hunter-style chicken dish made with onions, bell peppers, tomatoes, and mushrooms. This hearty recipe is perfect for a weeknight dinner.
Ingredients
- β1 1/2 pounds boneless, skinless chicken breast or thighs, cut into 1-inch pieces chicken
- β1 large onion, sliced onion
- β2 large bell peppers, sliced bell pepper
- β8 ounces mushrooms, sliced mushroom
- β2 large tomatoes, diced tomato
- β2 tablespoons olive oil
- β3 cloves, minced garlic
- βto taste salt
- βto taste black pepper
- βchopped, for garnish fresh parsley

Heat the olive oil in a large skillet over medium-high heat.

Add the chicken to the skillet and cook until browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Add the sliced onions and bell peppers to the skillet and cook until they start to soften, about 5 minutes.

Add the mushrooms to the skillet and cook until they release their liquid and start to brown, about 5 minutes.

Add the garlic to the skillet and cook for 1 minute, until fragrant.

Add the diced tomatoes to the skillet and cook for 2-3 minutes, until they start to break down.

Return the chicken to the skillet and stir to combine with the vegetables and sauce.

Simmer the chicken and vegetables in the sauce for 10-15 minutes, until the chicken is cooked through.
