Vietnamese Noodle Soup
A delicious and flavorful noodle soup originating from Vietnam, made with rice noodles, yummy ingredients, and a variety of spices.
Ingredients
- β8 oz Rice Noodlespreferably fresh
- β1 lb Chicken Breastboneless, skinless
- β4 cups Vegetable Brothlow sodium
- β1 can Coconut Milk14 oz
- β2 tbsp Vietnamese Fish Sauceoptional
- β1 bunch Fresh Basilchopped
- β1 bunch Fresh Cilantrochopped
- β2 tbsp Lime Juicefreshly squeezed
- β1 tsp Honeyoptional
Instructions

Bring 4 cups of vegetable broth to a boil in a large pot.

Reduce heat to medium-low and add 8 oz of rice noodles. Cook for 8-10 minutes or until noodles are tender.

In a separate pan, heat 2 tbsp of oil over medium-high heat.

Add 1 lb of boneless, skinless chicken breast and cook for 5-6 minutes per side or until cooked through.

Transfer cooked chicken to a plate and let it rest for 5 minutes before slicing.

Add 2 tbsp of Vietnamese fish sauce to the broth and stir to combine.

Add 1 can of coconut milk to the broth and stir to combine.

Add sliced chicken back to the pot and stir to combine.

Season with salt and pepper to taste.

Garnish with chopped fresh basil and cilantro.

Serve hot with a squeeze of fresh lime juice and a drizzle of honey (if desired).
