Venezuelan Bean Stew
A hearty and flavorful stew originating from Venezuela, made with tender beans and a rich blend of spices.
Ingredients
- β1 cup Kidney beanscanned or cooked from scratch
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β1 medium Red bell pepperdiced
- β2 tablespoons Tomato pasteoptional
- β2 cups Vegetable brothhomemade or store-bought
- β2 tablespoons Worcestershire sauceoptional
- β1 teaspoon Cuminground
- β1/2 teaspoon Paprikasmoked or sweet
- βto taste Saltoptional
Instructions

Heat 2 tablespoons of oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for another minute.

Add the diced red bell pepper and cook until tender, about 5 minutes.

Add the tomato paste, Worcestershire sauce, cumin, and paprika. Cook for 1 minute.

Add the vegetable broth, kidney beans, and salt. Bring the mixture to a boil.

Reduce the heat to low and simmer, covered, for 20-25 minutes.

Taste and adjust the seasoning as needed.
