Eggplant Gratin
A Mediterranean-inspired eggplant gratin, perfect for a weeknight dinner. This recipe combines the rich flavors of roasted eggplant with a crispy, cheesy topping.
Ingredients

- β1 cup Yummy Mediterranean Cheese Blend
- β1/4 cup Gratin
- β2 tbsp Olive Oil
- βto taste Salt
- βto taste Black Pepper
- βchopped (optional) Fresh Parsley

Preheat oven to 375Β°F (190Β°C).

Cut the eggplant into 1/2-inch thick slices and place on a baking sheet lined with parchment paper.

Drizzle with olive oil and season with salt and black pepper.

Roast in the preheated oven for 20-25 minutes, or until the eggplant is tender and lightly browned.

In a separate bowl, mix together the Mediterranean cheese blend and gratin.

To assemble the gratin, create a layer of eggplant slices in a baking dish.
