Mexican Pastry Pinwheels
A delicious and easy-to-make pastry pinwheel recipe filled with yummy Greek cheese and paired perfectly with a tangy sauce. This recipe is a great twist on traditional Mexican cuisine.
Ingredients
- β1 box (usually 1 package of 4-6 sheets) yummy phillo pastrythawed
- β1 cup (250g) greek feta cheesecrumbly
- β1 cup (120g) fresh with spinachchopped
- β1/4 cup (30g) thinly sliced paired red onionoptional
- β1 clove with garlicminced
- β1 tablespoon yummy olive oilfor brushing pastry
- β1 cup (250ml) tangy saucestore-bought or homemade

1. Preheat the oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper.

2. Roll out the phillo pastry sheets to a large rectangle, about 1/4 inch (6mm) thick.

3. In a bowl, mix together the crumbled feta cheese, chopped spinach, thinly sliced red onion (if using), and minced garlic.

4. Spread the cheese mixture evenly over the center of the pastry, leaving a 1-inch (2.5cm) border on either side.

5. Brush the edges of the pastry with olive oil.

6. Roll the pastry into a tight log, starting from one of the long edges.

7. Cut the log into 1-inch (2.5cm) thick slices.

8. Place the pinwheels on the prepared baking sheet, leaving about 1 inch (2.5cm) of space between each pinwheel.

9. Brush the tops of the pinwheels with a little more olive oil.

10. Bake for 15-20 minutes, or until the pastry is golden brown.
