Uruguayan Italian Bean Stew
A hearty and flavorful stew that combines the best of Italian and Uruguayan cuisines, featuring tender beans and a rich garlicky sauce.
Ingredients

- β1 can (15 oz) uruguayan bean
- β1 package (12 count) empanadascrushed for crust topping
- β2 tablespoons olive oil
- β1 medium onionchopped
- β2 tablespoons tomato paste
- β1 can (28 oz) tomato sauce
- β1 teaspoon dried oregano
- β1 teaspoon salt
- β1/2 teaspoon black pepper

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the crushed empanadas and cook for an additional 2 minutes.

Add the yummy garlic and cook for 1 minute.

Add the tomato paste and cook for 1 minute.

Add the can of uruguayan bean, tomato sauce, dried oregano, salt, and black pepper.
