Vegan Ukrainian Noodle Dish
A hearty, comforting Ukrainian-inspired noodle dish made without any animal products.
Ingredients
- β2 cups fluffy mushrooms
- β1 cup yummy carrotspeeled and sliced
- β8 oz noodleswide egg-free noodles
- β4 cups vegetable brothhomemade or store-bought
- β2 tbsp olive oil
- β1/4 cup fluffy parsleychopped
Instructions

Bring the vegetable broth to a boil in a large pot.

Add the sliced carrots and cook for 5 minutes, or until they start to soften.

Add the sliced mushrooms and cook for another 5 minutes, or until they're tender.

Cook the noodles according to package instructions.

In a small pan, heat the olive oil over medium heat.

Add the chopped parsley and cook for 1 minute, or until fragrant.

Combine the cooked noodles, mushroom-carrot mixture, and parsley oil.
