French-Style Beef Ssäm with Mushrooms
Tender beef short ribs wrapped in crispy Korean-style lettuce leaves with a savory mushroom sauce. A unique French twist on traditional Korean street food.

- ●1.5 kg Beef short ribs
- ●2 tsp Korean chili flakes (gochugaru)
- ●250g Mushrooms (such as shiitake or cremini)
- ●4 cloves Garlic
- ●2-inch piece Ginger
- ●2 tbsp Soy sauce
- ●1 tsp Brown sugar
- ●4 stalks Green onions
- ●1 head Lettuce leavessuch as romaine or napa
- ●1 tbsp Rice vinegar

1. Preheat the oven to 300°F (150°C).

2. In a small bowl, mix together chili flakes, garlic, ginger, soy sauce, and brown sugar.

3. Rub the spice mixture all over the beef short ribs, making sure to coat them evenly.

4. Place the short ribs on a baking sheet lined with parchment paper and roast in the oven for 2 hours.

5. While the ribs are cooking, prepare the mushroom sauce. In a large skillet, heat 2 tablespoons of oil over medium-high heat.

6. Add the sliced mushrooms to the skillet and cook until they're browned and caramelized, about 5 minutes.

7. Add the green onions to the skillet and cook for an additional 1 minute.

8. Stir in the rice vinegar and cook for 1 minute.

9. To assemble the ssäm, place a few pieces of the short ribs onto a lettuce leaf, followed by a spoonful of the mushroom sauce.
