Pork Tacos al Pastor
A twist on traditional Mexican tacos, featuring marinated pork, baked to perfection. Serve with your favorite toppings.
Ingredients
- β1 pound pork shoulder thinly sliced
- β1/2 cup orange juice freshly squeezed
- β1/4 cup lime juice freshly squeezed
- β3 cloves garlic minced
- β2 chipotle peppers in adobo chopped
- β1 teaspoon cumin ground
- β1/2 teaspoon paprika smoked
- β1/2 teaspoon salt to taste
- β8 tortillas corn or flour
- β1 head cabbage shredded

Preheat oven to 400Β°F (200Β°C).

In a large bowl, whisk together orange and lime juice, garlic, chipotle peppers, cumin, paprika, and salt.

Add sliced pork to the marinade and toss to coat.

Let pork marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

Remove pork from marinade, letting any excess liquid drip off.

Place pork on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until cooked through.

Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
