Stir Fry Borscht
A fusion dish blending the flavors of Asian stir-fry with the heartiness of traditional borscht.
Ingredients
- β2 cups Carrotspeeled and sliced
- β2 cups Beetspeeled and diced
- β1 cup Onionschopped
- β3 cloves Garlicminced
- β2 inches Gingergrated
- β2 tablespoons Vegetable oil
- β1 tablespoon Soy sauce
- β1 teaspoon Sesame oil
- β1 packet Borscht mix
- β1/4 cup Green onionschopped

Heat 1 tablespoon of vegetable oil in a large pan over medium heat.

Add the chopped onions and cook until softened, about 3-4 minutes.

Add the minced garlic and grated ginger, cooking for an additional minute.

Add the sliced carrots and diced beets, cooking for 5 minutes.

Add the borscht mix, soy sauce, and sesame oil, stirring to combine.

Cook for an additional 5 minutes, or until the vegetables are tender.
