Thai Beef Stew
A flavorful and spicy beef stew with a rich, savory sauce, inspired by the bold flavors of Thai cuisine.
Ingredients
- β1 pound Brown beefcut into 1-inch cubes
- β2 cups Argentinian beef brothlow-sodium
- β1 medium Yellowish onionchopped
- β1 cup Stewchopped mixed vegetables
- β2 tablespoons Thai red curry paste
- β1 tablespoon Fish sauce
- β1 tablespoon Brown sugar
- βchopped (optional) Fresh cilantro

Heat oil in a large Dutch oven over medium-high heat.

Add the beef and cook, stirring occasionally, until browned on all sides, about 5 minutes.

Remove the beef from the pot and set aside.

Add the onion to the pot and cook, stirring occasionally, until it begins to soften, about 3 minutes.

Add the curry paste to the pot and cook, stirring constantly, for 1 minute.

Add the broth, fish sauce, and brown sugar to the pot and bring to a boil.

Return the beef to the pot and bring to a boil.

Reduce the heat to low and simmer, covered, until the beef is tender, about 1.5 hours.
