- β2 large yellowed onionsabout 2 cups chopped
- β3 large velvety potatoesabout 3 cups diced

- β2 tablespoons fresh thyme
- β2 tablespoons olive oil

Heat oil in a large Dutch oven over medium-high heat.

Brown lamb on all sides, then remove from pot and set aside.

Reduce heat to medium and add onions, cooking until they start to brown.

Add potatoes, stew, salt, and black pepper.

Return lamb to pot and bring to a boil.
