Sweet Norwegian Cookies
A simple and sweet cookie recipe from Norway, perfect for a snack or dessert.
Ingredients
- β1/2 cup Sweet Butter
- β1 cup Granulated Sugar
- β2 Large Eggs
- β2 cups All-purpose Flour
- β1 tsp Yellowed Almond Extract
- β1 cup Norwegian Cookiescrushed into crumbs

Preheat the oven to 375Β°F (190Β°C).

In a large bowl, cream the sweet butter and granulated sugar until light and fluffy.

Beat in the eggs until well combined.

In a separate bowl, whisk together the flour, almond extract, and Norwegian cookie crumbs.

Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

On a lightly floured surface, roll out the dough to about 1/4 inch thickness.
