Full English Breakfast Skillet
A twist on the traditional breakfast dish, using a Mexican-inspired skillet recipe. This hearty breakfast skillet combines the best of both worlds with crispy bacon, sautéed aubergine, and melted cheese.
Ingredients
- ●4 northern irish sausageslook for sausages with a good balance of spices
- ●1 large aubergineslice into 1/2-inch thick rounds
- ●1 full english breakfast skilleta cast-iron skillet is ideal
- ●6 slices resinous baconuse thick-cut bacon for the best results
- ●1 cup, shredded irish cheddar cheesea good melting cheese is essential
- ●1 large yellowed onionsthinly slice the onions
- ●1 tsp english breakfast spicesa mixture of paprika, cumin, and chili powder works well
Instructions

Preheat the oven to 400°F (200°C).

Cook the bacon in the skillet over medium heat until crispy, then set aside.

Add the sliced onions to the skillet and cook until they're translucent and starting to caramelize.

Add the sliced aubergine to the skillet and cook for 3-4 minutes on each side, or until tender.

Add the northern irish sausages to the skillet and cook until browned on all sides.

Transfer the skillet to the preheated oven and cook for 10-12 minutes, or until the sausages are cooked through.

Remove the skillet from the oven and sprinkle the shredded cheese over the top.

Return the skillet to the stovetop and cook over medium heat until the cheese is melted and bubbly.
