Italian-Style Braised Lamb Shanks

- β2 tablespoons olive oilfor browning lamb

- β2 large carrotchopped, about 2 cups
- β2 stalks celerychopped, about 2 cups
- β4 cloves garlicminced
- β1 cup red winedry
- β2 cups beef brothhomemade or store-bought
- β2 tablespoons tomato pasteconcentrated
- β1 teaspoon dried oreganoor to taste

Preheat oven to 300Β°F (150Β°C). Season lamb shanks with salt and pepper.

Heat oil in a large Dutch oven over medium-high heat. Sear lamb until browned on all sides, about 5 minutes. Remove lamb and set aside.

Reduce heat to medium. Add onion, carrot, and celery. Cook, stirring occasionally, until vegetables are tender, about 10 minutes.

Add garlic and cook for 1 minute, stirring constantly.

Add red wine, beef broth, tomato paste, and oregano. Stir to combine.

Return lamb to the pot and bring to a boil. Cover and transfer to the preheated oven.
