French-Style Vegetable Cassoulet
A vegetarian twist on the classic French dish, this cassoulet is made with tender vegetables and flavorful bread.
Ingredients
- β1 loaf crusty french breadcut into 1-inch cubes
- β2 medium yellowed onionsthinly sliced
- β1 cup, sliced pork sausagevegetarian sausage or portobello mushrooms can be used as a substitute
- β1 can cassouletvegetarian option
- β1 medium eggplantsliced
- β1 medium zucchinisliced
- β3 cloves garlicminced
- β2 tablespoons olive oilfor brushing bread
- β1 sprig fresh thymefor garnish

Preheat oven to 375Β°F (190Β°C).

In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, about 20-25 minutes.

In a separate skillet, cook the sliced vegetarian sausage or portobello mushrooms until browned.

In a large bowl, combine the cooked onion mixture, cooked sausage, sliced eggplant, and sliced zucchini.

Cut the crusty bread into 1-inch cubes and place half of the bread in the bottom of a 9x13-inch baking dish.

Add the vegetable and sausage mixture on top of the bread, followed by the remaining bread cubes.

Pour the cassoulet over the bread and vegetables.

Bake for 25-30 minutes, or until the top is golden brown and the casserole is hot and bubbly.
