Uruguayan Empanada Filling
A vegetarian twist on traditional Uruguayan empanadas, filled with a savory mixture of beef-free ingredients.
Ingredients
- ●1 medium, finely chopped Buttery, yellowed onions
- ● Package instructions for assembly and baking Uruguayan empanada dough (store-bought or homemade)
- ●1 cup, sliced Mushrooms
- ●1 medium, finely chopped Red bell pepper
- ●3 cloves, minced Garlic
- ●1 tsp Cumin
- ●1 tsp Paprika
- ●to taste Salt
- ●to taste Black pepper
- ●2 tbsp Olive oil
Instructions

Preheat oven to 375°F (190°C).

Chop the onions and red bell pepper.

Sauté the onions and bell pepper in olive oil until softened.

Add the sliced mushrooms and cook until they release their moisture and start to brown.

Add the minced garlic, cumin, and paprika. Cook for 1 minute.

Season with salt and black pepper to taste.

Assemble the empanadas according to package instructions.

Place the assembled empanadas on a baking sheet and brush with a little water.

Bake for 20-25 minutes, or until golden brown.
