Roasted Aubergine Gratin
A simple, flavorful gratin dish made with roasted aubergine, perfect for a weeknight dinner.

- β4-5 baby potatoes
- β1 cup grated cheddar cheese
- β1/2 cup heavy cream

Cut the aubergine and baby potatoes into 1/2-inch thick slices.

In a large bowl, mix together the grated cheese, heavy cream, minced garlic, salt, and pepper.

In a separate baking dish, create a layer of aubergine slices.
