Spicy Chickpea Stir Fry
A savory and spicy stir fry made with chickpeas, Eastern flavors, and a hint of Chinese spices. Serve over steamed rice for a delicious and filling meal.
Ingredients

- β1 medium yellow onion
- β2 tbsp hummus
- β1 tsp middle eastern spice blend
- β1 tbsp soy sauce
- β1 tsp grated ginger
- β1/4 cup chopped green onions
Instructions

Heat 1 tbsp of oil in a large skillet or wok over medium-high heat.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the ginger and cook for an additional minute.

Add the chickpeas, soy sauce, and middle eastern spice blend. Stir to combine.

Cook for an additional 4-5 minutes, or until the chickpeas are coated in the sauce.
