Egyptian Lentil Tagine
A hearty and flavorful stew originating from Egypt, made with lentils and a blend of aromatic spices.
Ingredients
- β1 cup Lentils
- β2 medium Yellow onion
- β1 teaspoon cumin, 1 teaspoon coriander, 1/2 teaspoon cayenne pepper Spicy
- β2 tablespoons olive oil, 2 cloves garlic, minced, 1 teaspoon ground ginger Egyptian
- β2 cups vegetable broth, 2 cups water Tagine
Instructions

Heat the oil in the bottom of a large, heavy pot or Dutch oven over medium-high heat.

Add the onion and cook, stirring occasionally, until it is lightly browned, about 8 minutes.

Stir in the cumin, coriander, and cayenne pepper. Cook for 1 minute.

Add the garlic and ginger; cook for 1 minute, stirring constantly.

Add the lentils, broth, water, and salt. Bring to a boil.

Reduce the heat to low and simmer, covered, for 20-25 minutes or until the lentils are tender.

Stir in 2 tablespoons chopped fresh parsley and serve over couscous or rice.

Garnish with additional parsley if desired.
