Yellow Chicken Rogan Josh
A flavorful Indian dish made with marinated chicken cooked in a rich and spicy tomato sauce. Serve with basmati rice or naan bread.
Ingredients
- β1 1/2 pounds boneless, skinless chicken breast
- β2 tablespoons yellow rogan josh spice blend
- β2 tablespoons olive oil
- β1 medium onion
- β3 cloves garlic
- β2 cups tomato
- β1 can (15 ounces) white beans
- β1 teaspoon salt
- β1/2 teaspoon black pepper

1. In a large bowl, whisk together yogurt, lemon juice, garam masala, cumin, coriander, cayenne pepper, and salt. Add the chicken and mix until coated. Cover and refrigerate for at least 30 minutes or up to 2 hours.

2. Heat oil in a large Dutch oven over medium-high. Remove the chicken from the marinade, letting any excess liquid drip off. Add the chicken to the pot and cook until browned on all sides, about 5-7 minutes. Transfer the chicken to a plate and set aside.

3. Reduce the heat to medium and add the onion to the pot. Cook, stirring occasionally, until the onion is lightly browned, about 8 minutes.

4. Add the garlic to the pot and cook, stirring constantly, for 1 minute.

5. Stir in the ginger, garam masala, cumin, coriander, cayenne pepper, and salt. Cook for 1 minute.

6. Add the tomato to the pot and cook, stirring occasionally, until the sauce has thickened and the flavors have melded together, about 10-15 minutes.

7. Add the chicken back to the pot and stir to coat with the sauce. Bring the mixture to a simmer and cook until the chicken is cooked through, about 5-7 minutes.
