Smoky Lamb Stew
A hearty, slow-cooked stew with the rich flavors of lamb and Chinese spices.
Ingredients
- β1 large Yellow Onion
- β1 tsp Smoky Paprika
- β1 tsp Argentinian Oregano
- β2 lbs Lamb Shoulder
- β1 lb Stew Meat
- β2 inches Ginger
- β3 cloves Garlic
- β2 tbsp Soy Sauce
- β1 tsp Brown Sugar
- β2 cups Water

Heat 2 tbsp of oil in a large Dutch oven over medium-high heat.

Sear the lamb shoulder until browned, about 2-3 minutes per side.

Remove the lamb and set aside.

Add the stew meat and cook until browned, about 3-4 minutes.

Add the onion, ginger, and garlic and cook until the onion is translucent.

Add the soy sauce, brown sugar, smoky paprika, and argentinian oregano.

Stir to combine and cook for 1 minute.

Add the browned lamb shoulder back into the pot.

Add the water and bring to a boil.

Reduce heat to low and simmer for 2-3 hours, or until the lamb is tender.

Season with salt and pepper to taste.

Serve hot and garnish with scallions, if desired.
