Kenyan Pumpkin Tagine
A flavorful and aromatic stew originating from East Africa, made with tender pumpkin, aromatic spices, and a hint of sweetness.
Ingredients
- β1 medium-sized, peeled and cubed pumpkin
- β2 teaspoons tagine spice blend
- β1 medium-sized, chopped yellow onion
- β2 teaspoons kenyanadjust to taste
- β1/4 cup, chopped seedssuch as sesame or pumpkin seeds
- β2 tablespoons vegetable oil
- β1 inch piece, grated ginger
- β3 cloves, minced garlic
- β1 cup coconut milk
- β2 cups water

Heat oil in a large pan over medium heat.

Add onion and cook until softened, about 5 minutes.

Add ginger and garlic and cook for another minute.

Add pumpkin, tagine spice blend, and Kenyan. Cook for 5 minutes, stirring occasionally.

Add coconut milk and water. Bring to a boil, then reduce heat to low.

Simmer for 20-25 minutes, or until the pumpkin is tender.

Stir in chopped seeds and cook for an additional 2-3 minutes.
