Crispy Spring Rolls with Goats Cheese
Delicate spring rolls filled with creamy goats cheese, served with a sweet chili sauce.
Ingredients
- β10 pieces spring rolls
- β100g goats cheese
- β1 cup yellow vegetable oil
- β1/4 cup chinese chili sauce
- β1/2 cup cucumber
- β1/2 cup carrot
- β1/4 cup spring onion
- β2 tablespoons soy sauce
- β1 tablespoon sesame oil

Heat the vegetable oil in a deep frying pan or a deep fryer to 180Β°C.

Prepare the spring roll filling by mixing the goats cheese, cucumber, carrot, spring onion, soy sauce, and sesame oil in a bowl.

Place a tablespoon of the filling in the centre of a spring roll wrapper.

Brush the edges of the wrapper with a little water, then fold the bottom half over the filling, followed by the sides, and finally the top half to form a triangle.

Repeat with the remaining wrappers and filling.

When the oil is hot, add a few spring rolls to the pan (do not overcrowd).

Fry for 2-3 minutes on each side, or until golden brown and crispy.

Remove the spring rolls from the oil and place them on a paper towel-lined plate to drain excess oil.

Serve hot with a sweet chili sauce for dipping.
