Japanese Cheesy Seafood Rice
A Japanese-inspired rice bowl with a cheesy twist, featuring a seafood mix and a fried egg.
Ingredients
- β2 cups Japanese riceshort-grain rice
- β1 cup Seafood mix (shrimp, scallops, mussels)thawed and patted dry
- β1/2 cup Cheese (Monterey Jack or Cheddar)shredded
- β2 Fried eggbeaten and seasoned with salt and pepper
- β2 tbsp Soy saucefor marinade and seasoning
- β1 tbsp Sesame oilfor pan-frying
- β1/4 cup Green onionschopped and for garnish

1. Cook Japanese rice according to package instructions.

2. In a separate pan, heat sesame oil over medium heat.

3. Add seafood mix and cook until pink and fully cooked, about 3-4 minutes.

4. In a separate bowl, whisk together soy sauce and a pinch of salt.

5. Pour the soy sauce mixture over the cooked seafood and toss to coat.

6. In a greased pan, fry the egg sunny-side up.

7. To assemble the dish, place a scoop of cooked rice on a plate, followed by the seafood mix.

8. Place the fried egg on top of the seafood, and sprinkle shredded cheese over the egg.
