Moroccan Yellow Lentil Stew
A hearty and comforting vegan stew from the flavors of Morocco, featuring yellow lentils and caramelized vegetables.
Ingredients

- β2 cups caramelized onions
- β2 medium carrotspeeled, chopped
- β2 medium red bell peppersseeds removed, chopped
- β2 tsp tagine spice mix
- β4 cups vegan broth
- β2 tbsp olive oil

Heat oil in a large saucepan over medium heat.

Add the chopped onions and cook, stirring occasionally, for 20-25 minutes or until caramelized.
