Spring Rolls with Scrambled Egg Filling
A delicious and easy to make snack filled with scrambled eggs and spring onions, wrapped in crispy yellow Dutch rolls.
Ingredients
- β4-6 rolls Dutch rollspreferably yellow
- β1 bunch Spring onionsfinely chopped
- β2 tablespoons Buttermelted
- β4 large eggs Eggsbeaten
- βto taste Salt
- βto taste Black pepper
Instructions

1. Heat the butter in a pan over medium heat.

2. Pour in the beaten eggs and scramble them until they are cooked through.

3. Add the chopped spring onions to the pan and stir well.

4. Season the egg mixture with salt and black pepper to taste.

5. Lay a Dutch roll flat and place a tablespoon or two of the egg mixture in the center.

6. Fold the bottom half of the roll up over the filling, then fold in the sides and roll up the top half to form a tight cylinder.

7. Repeat with the remaining rolls and filling.

8. Serve the spring rolls hot with your favorite dipping sauce.
