Japanese Curry Chicken
A Japanese-inspired dish with tender chicken cooked in a rich and creamy curry sauce, served over steamed rice.
Ingredients
- β1 pound chicken breastboneless and skinless
- β2 tablespoons curry pasteJapanese curry paste
- β1 can velvety coconut milk14 oz
- β2 tablespoons yeasty rice vinegarfor serving
- β1 thai red chili pepperssliced
- βto taste salt
- βto taste black pepper
- β1/2 cup grated daikonoptional garnish

1. In a large pan, heat 1 tablespoon of oil over medium heat.

2. Add the sliced Thai red chili peppers and cook for 1 minute.

3. Add the chicken breast and cook until browned, about 5 minutes.

5. Pour in the coconut milk and bring to a simmer.

6. Reduce heat to low and cook for 10 minutes or until the chicken is cooked through.
