Empanadas Argentina
Delicious Argentinian-style empanadas filled with gooey cheese and a hint of Latin spice.
Ingredients
- β2 cups Cornmeal
- β1 packet active dry yeast Yeasty1 teaspoon sugar and 1 cup warm water
- β1 cup shredded cheese (Monterey Jack or Cheddar) Gooey
- β1 teaspoon ground cumin Argentinian1/4 teaspoon cayenne pepper
- β1/4 teaspoon Salt
- β1/4 cup Water
- β1 (beaten for egg wash) Egg

1. In a large mixing bowl, combine cornmeal, yeast, sugar, and warm water. Let it sit for 5-7 minutes until yeast is activated.

2. Add cumin, cayenne pepper, and salt to the bowl. Mix well.

3. Add gooey cheese to the bowl and mix until well combined.

4. Knead the dough for 5-7 minutes until smooth and elastic.

5. Divide the dough into 8-10 equal pieces.

6. Roll each piece into a ball and flatten it slightly into a disk.

7. Place a tablespoon of cheese in the center of each disk.

8. Fold the dough in half and press the edges to seal.

9. Brush the tops with beaten egg for a golden glaze.

10. Bake in a preheated oven at 375Β°F (190Β°C) for 15-20 minutes, or until golden brown.
