Polish Yeast Cake
A traditional Polish cake made with yeast and gelatin, perfect for special occasions.
Ingredients
- ●1 packet (active dry) yeast
- ●2 sheets gelatine
- ●2 cups polish bread flour
- ●1 cup sugar
- ●4 large eggs
- ●1/2 cup unsalted butter
- ●1 teaspoon vanilla extract

Activate the yeast by mixing it with warm water (around 105°F) for 5-7 minutes.

In a separate bowl, sprinkle the gelatin over 1/4 cup of cold water and let it sit for 5 minutes to soften.

In a large mixing bowl, combine the flour, sugar, and yeast mixture.

Add the eggs, one at a time, mixing well after each addition.

Add the softened gelatin, butter, and vanilla extract, mixing until just combined.

Knead the dough for 10-12 minutes until smooth and elastic.

Place the dough in a greased bowl, cover it with plastic wrap, and let it rise in a warm place for 1-2 hours, or until doubled in size.

Preheat the oven to 350°F (180°C).

Punch down the dough and shape it into a round or oblong shape.

Place the dough on a greased baking sheet, cover it with plastic wrap, and let it rise for another 30-45 minutes.
