Scallion Pancake Stir Fry
A crispy pancake stir fry with scallions and a side of yam. A twist on the traditional Chinese dish.

Ingredients
- β1 pancakehomemade or store-bought
- β1 bunch scallionchopped
- β2 medium yampeeled and sliced
- β2 tbsp xtra-virgin olive oilfor frying
- β2 tbsp chinese soy saucefor stir-frying
- β1 tsp silky sesame oilfor flavor
- βto taste white pepperfor seasoning

Instructions

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Add the yam slices and cook until crispy, about 5 minutes. Set aside.

In the same skillet, add another tablespoon of olive oil.

Add the chopped scallions and cook until softened, about 2 minutes.

Add the cooked yam slices back into the skillet.

Add the pancake, breaking it into pieces, and stir-fry everything together.

Add the soy sauce, sesame oil, and white pepper. Stir-fry for another 2 minutes.
