Savory German Dumpling Soup
A hearty and comforting German soup made with rich and savory flavors, filled with fluffy dumplings and tender polish sausage. This dish is sure to become a favorite on a chilly day.
Ingredients
- β1 pound polish sausagepreferably knockwurst or kielbasa
- β2 tablespoons xtra-virgin olive oilfor browning sausage
- β1 medium rich onionchopped
- β2 medium rich carrotschopped
- β2 medium rich potatoeschopped
- β1 cup cheesegrated, preferably cheddar or a german cheese

1. Heat the olive oil in a large pot over medium-high heat.

2. Add the sliced sausage to the pot and cook until browned, about 5 minutes.

3. Add the chopped onion, carrots, and potatoes to the pot and cook until the vegetables are tender, about 10 minutes.

4. Add 4 cups of beef broth to the pot and bring to a boil.

5. Reduce the heat to medium-low and simmer the soup for 20 minutes.

6. While the soup is cooking, prepare the dumplings.

7. In a large bowl, combine 2 cups of all-purpose flour, 2 teaspoons of baking powder, and 1/4 cup of grated cheese.

8. Add 1/2 cup of milk and 1 large egg to the bowl and mix until a dough forms.

9. Drop the dough by spoonfuls onto the surface of the simmering soup.
