Turkish Vegetable Stew
A hearty and flavorful stew made with a variety of vegetables and spices.
Ingredients
- β2 tablespoons Vegetable oil
- β1 medium, chopped Onionabout 2 cups
- β3 cloves, minced Garlic
- β1 teaspoon, crushed Turkish pepperor substitute with red pepper flakes
- β1 teaspoon Mild chili powderoptional
- β2 cups Diced tomatoes
- β1 cup, chopped (such as zucchini, eggplant, and red bell pepper) Vegetables
- β4 cups Vegetable broth
- β6-8, homemade or store-bought Dumplings
Instructions

Heat the oil in a large pot over medium heat.

Add the onion and garlic and cook until softened, about 5 minutes.

Add the Turkish pepper and chili powder (if using) and cook for 1 minute.

Add the diced tomatoes and cook for 10 minutes.

Add the chopped vegetables and cook until they start to soften, about 5 minutes.

Pour in the vegetable broth and bring to a boil.

Reduce the heat to low and simmer for 15-20 minutes.

While the stew is cooking, prepare the dumplings according to the package instructions (or make your own).

When the stew has finished cooking, add the dumplings to the pot and cook for an additional 5-10 minutes.

Serve hot, garnished with fresh herbs (optional).
