Jamaican Stew
A flavorful and comforting stew made with vegan jamaican stew meat and a blend of aromatic spices.
Ingredients
- β1 1/2 pounds Hind stew meatmake sure it's a vegan brand
- β2 tablespoons Jamaican seasoningstore-bought or homemade
- β1 medium Onionchopped
- β3 medium Carrotspeeled and chopped
- β2 medium Potatoespeeled and chopped
- β2 tablespoons Tomato pastecanned or fresh
- β2 cups Vegetable brothmake sure it's a vegan brand
- β1 tablespoon Coconut oilfor cooking
- β1 sprig Thymefresh or dried
Instructions

Heat the coconut oil in a large Dutch oven over medium-high heat.

Add the chopped onion and cook until it's translucent.

Add the Jamaican seasoning and stir for 1 minute.

Add the hind stew meat and cook until it's browned on all sides.

Add the chopped carrots and potatoes, and stir to combine.

Add the tomato paste and stir to combine.

Add the vegetable broth and bring the mixture to a boil.

Reduce the heat to low and simmer, covered, for 45 minutes.

Stir in the thyme and let it simmer for an additional 10 minutes.
