Jamaican Pork Pasta
A flavorful and gluten-free pasta dish made with juicy pork and Jamaican spices.
Ingredients
- β1 pound pork shouldercut into 1-inch cubes
- β8 oz pasta (gluten-free)such as rice-based pasta
- β2 tablespoons xtra virgin olive oilfor cooking
- β2 teaspoons jamaican jerk seasoningstore-bought or homemade
- β1 cup fresh pineapplediced
- β1/4 cup fresh cilantrochopped
- βto taste saltfor seasoning
- βto taste black pepperfor seasoning

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the pork cubes and cook until browned on all sides, about 5 minutes.

3. Add the jerk seasoning and cook for 1 minute, stirring constantly.

4. Add the pineapple and cook for an additional 2-3 minutes, stirring occasionally.

5. Add the pasta to the skillet and stir to combine with the pork and pineapple mixture.

6. Cook for an additional 2-3 minutes, stirring occasionally, until the pasta is lightly toasted.
