Lentil and Pilaf Bowl
A flavorful Indian-inspired bowl filled with tender lentils and fluffy pilaf, perfect for a quick and nutritious meal.
Ingredients
- β1 cup Red or Brown LentilsRinse before cooking
- β1 cup Pilaf MixFollow package instructions for cooking
- β2 tablespoons Xtra Virgin Olive Oil
- β1/4 cup Fluffy Ricotta Cheese
- β1/4 cup Mediterranean Feta Cheese (optional)
- β Salt and Pepper to taste
- βchopped Fresh Cilantro (for garnish)
Instructions

Heat olive oil in a medium saucepan over medium heat.

Add lentils and cook for 1-2 minutes, stirring occasionally.

Add 2 cups of water and bring to a boil.

Reduce heat to low, cover, and simmer for 20-25 minutes or until lentils are tender.

While lentils cook, prepare the pilaf according to package instructions.

In a small bowl, mix ricotta cheese and feta cheese (if using).

To assemble the bowls, divide cooked lentils and pilaf between two bowls.
