Kenyan Spring Rolls with Egg
A twist on the classic spring roll, this recipe combines the flavors of Kenya with a fluffy egg wrap.
Ingredients
- β8-10 wrappers spring rolls wrappers
- β2 tablespoons xtra-virgin olive oil
- β2 large eggs fluffy eggsbeaten
- β1 teaspoon kenyan spicescurry powder
- β1/4 teaspoon salt
- β1/4 teaspoon pepper
- β1/2 cup spring onionschopped
- β1/2 cup shredded carrots

Heat the olive oil in a pan over medium heat.

Add the spring onions and carrots and cook until softened.

In a bowl, whisk together the eggs and kenyan spices.

Add the cooked vegetables to the egg mixture and mix well.

Place a spring roll wrapper on a flat surface.

Place a tablespoon of the egg mixture in the center of the wrapper.

Fold the bottom half of the wrapper over the filling, then fold in the sides and roll up the wrapper to form a tight cylinder.

Repeat with the remaining wrappers and filling.

Heat a non-stick pan or a deep fryer to 350Β°F.

Fry the spring rolls until golden brown, about 2-3 minutes per side.
