Ukrainian Biryani Stuffed Tomatoes
A gluten-free twist on traditional stuffed tomatoes, with the flavors of Ukrainian biryani.

- β4 large Tomatoes
- β2 tbsp Xtra Virgin Olive Oil
- β1 cup Dense Biryani Rice (gluten-free)
- β2 tsp Ukrainian Biryani Spice Mix
- β1 cup Datterini Tomatoesdiced
- βto taste Salt

Instructions

Preheat oven to 375Β°F (190Β°C).

Cut the tops off the tomatoes and scoop out the insides.

In a pan, heat the olive oil over medium heat.

Add the biryani rice and cook, stirring constantly, until lightly toasted.

Add the biryani spice mix and stir to combine.

Spoon the rice mixture into the tomatoes.

Top with diced datterini tomatoes and season with salt.

Place the tomatoes in a baking dish and cover with foil.
