Crispy Vegetable Noodle Stir Fry
A quick, flavorful stir-fry dish made with a variety of colorful vegetables and crispy noodles. Perfect for a weeknight dinner.
Ingredients

- β1/4 cup Crispy Fried Shallotsstore-bought or homemade
- β1 cup, sliced Carrots
- β1 cup, florets Broccoli
- β1 cup, sliced Mushrooms
- β2 tablespoons Malaysian Chili Paste
- β2 tablespoons Soy Sauce
- β2 tablespoons Hoisin Sauce
- β2 tablespoons Vegetable Oil
- β1 tablespoon Sesame Seeds

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the sliced carrots and cook for 3-4 minutes, or until they start to soften.

Add the broccoli and mushrooms and cook for another 3-4 minutes, or until the vegetables are tender.

Add the vegetable noodles, chili paste, soy sauce, and hoisin sauce to the skillet. Stir-fry for 2-3 minutes, or until the noodles are well coated.

Stir in the crispy fried shallots and sesame seeds.
