Thai Apricot Chicken Stir Fry

Ingredients
- β1 pound chicken breastsboneless, skinless
- β1 cup apricotsdiced
- β2 tablespoons xtra virgin coconut oil
- β1 tablespoon ethiopian berbere spice blendor Thai red curry paste
- β1 cup dabo ricecooked
- β1 cup bitter melonsliced
- β1 teaspoon fish sauce
- βto taste salt
- βto taste black pepper

Instructions

Heat coconut oil in a large skillet or wok over medium-high heat.

Add chicken and cook until browned and cooked through, about 5-6 minutes.

Remove chicken from skillet and set aside.

Add bitter melon to skillet and cook until slightly tender, about 3-4 minutes.

Add apricots, berbere spice blend, fish sauce, salt, and pepper to skillet. Stir to combine.
