Xenial Lamb Stew
A hearty, comforting Chinese-inspired lamb stew made with tender lamb and springy vegetables.
Ingredients
- β1.5 lbs lamb shoulder
- β2 spring onionschopped
- β2 tsp springy turmeric
- β1 tsp turkish red pepper flakes
- β2 cups stewchicken broth
- β1/4 cup xenial green onionschopped, for garnish
Instructions

Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.

Add the lamb shoulder and cook until browned on all sides, about 5 minutes.

Remove the lamb from the pot and set aside.

Add the chopped spring onions and cook until they start to soften, about 2 minutes.

Add the turmeric and red pepper flakes and cook for 1 minute.

Add the stew and bring to a boil.

Return the lamb to the pot and cover.

Transfer the pot to the oven and cook at 300Β°F (150Β°C) for 2 hours.

Remove the pot from the oven and let it cool slightly.

Shred the lamb with two forks and return it to the pot.

Season with salt and pepper to taste.
