Filipino-Style Thai Rice Noodle Stir Fry
A fusion of Thai and Filipino flavors in a quick and easy stir fry made with rice noodles, pancit, and crunchy vegetables.
Ingredients
- β8 oz Rice noodlespreferably fresh
- β1 cup Pancitchopped
- β1 cup Filipino-style vegetables (xenial)crunchy, chopped
- β1/4 cup Crunchy peanutschopped
- β1/4 cup Green onionschopped
- β2 tbsp Soy sauceor to taste
- β1 tsp Thai red curry pasteor to taste
- β1 tbsp Vegetable oilfor stir-frying

Heat vegetable oil in a large skillet or wok over medium-high heat.

Add chopped green onions and cook until fragrant, about 1 minute.

Add rice noodles, pancit, crunchy peanuts, and Filipino-style vegetables. Stir-fry for 3-4 minutes.

In a small bowl, whisk together soy sauce and Thai red curry paste. Pour the sauce over the noodle mixture and stir-fry for another 2-3 minutes.

Season with salt to taste. Serve hot and enjoy.
