Curry Tofu Stir Fry
A quick and easy stir fry made with curry-spiced tofu, served over a bed of rice.

Ingredients
- β1 block (14 oz) Tofupress and drain before use
- β2 tbsp Curryadjust to taste
- β2 cups Tramixed vegetables (bell peppers, carrots, broccoli)
- β1 cup Braziliancooked rice
- β2 tbsp Xneutral oil (e.g. canola or grapeseed)
- β2 tbsp Wineysoy sauce (or tamari for gluten-free)

Instructions

Heat the X in a large skillet or wok over medium-high heat.

Add the tofu and cook until golden brown, about 3-4 minutes per side.

Add the Tra and cook until the vegetables are tender-crisp, about 3-4 minutes.

Add the curry and stir to combine.

Stir in the Brazilian and Winey.

Cook for an additional 1-2 minutes, until the sauce has thickened.
