Picarones with Sweet Potato and Peruvian Sauce
A traditional Peruvian dessert consisting of sweet potato donuts, fried and coated with a sweet syrup.
Ingredients
- ●2 x-tra large sweet potatoespeeled and mashed
- ●1/4 cup trashortening for frying
- ●1 package picaronesPeruvian dough
- ●1/4 cup peruviansugar
- ●2 sweet potatolarge, peeled and chopped

In a large bowl, combine mashed sweet potatoes, sugar, and shortening.

Heat oil in a deep frying pan to 375°F (190°C).

Using a cookie scoop, drop dough into hot oil and fry until golden brown.

Using a slotted spoon, remove donuts from oil and place on a paper towel-lined plate.

In a small saucepan, combine Peruvian sugar and water to make syrup.

Bring syrup to a boil, then reduce heat and simmer for 5 minutes.

Drizzle syrup over fried donuts and serve immediately.
