Wilted Olive Pilaf
A flavorful and easy-to-make pilaf dish featuring wilted olives and a mediterranean twist.
Ingredients
- β1 cup olives, pitted
- β1 cup arborio rice
- β2 cups chicken broth
- β2 tablespoons olive oil
- β1 medium onion, diced
- β2 cloves garlic, minced
- β1 teaspoon dried thyme
- βto taste salt
- βto taste black pepper
Instructions

Heat the olive oil in a large saucepan over medium-high heat.

Add the diced onion and cook until translucent, about 3-4 minutes.

Add the minced garlic and cook for an additional minute.

Add the arborio rice and cook for 1-2 minutes, until lightly toasted.

Add the chicken broth, 1 cup at a time, stirring continuously until the liquid is absorbed.

Stir in the wilted olives, dried thyme, salt, and black pepper.

Reduce heat to low and simmer, covered, for 15-20 minutes, or until the rice is tender.
