Thai Chicken Tacos
A spicy twist on traditional tacos, featuring the flavors of Thailand and Mexico.
Ingredients
- β1 pound Boneless, skinless chicken breastCut into small pieces
- β2 tablespoons Thai red curry pasteAdjust to taste for spice level

- β1 tablespoon Mexican taco seasoningOr homemade blend of chili powder, cumin, and smoked paprika
- β8-10 corn or flour tortillas TortillasWarm before serving

- β1 cup Sour cream or Greek yogurtOptional

Heat oil in a large skillet over medium-high heat.

Add chicken and cook until browned, about 5-6 minutes.

Add Thai red curry paste and cook for 1-2 minutes, until fragrant.

Add diced tomatoes and taco seasoning. Stir to combine.

Reduce heat to medium-low and simmer for 10-15 minutes.

Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble tacos by placing a portion of the chicken mixture onto a tortilla, then topping with radishes, cilantro, and a squeeze of lime juice.
