Thai Tofu Curry
A flavorful and easy-to-make Thai-inspired curry dish featuring crispy tofu and a blend of spices.
Ingredients
- β1 block (14 oz) tofu
- β2 tbsp curry paste
- β2 tbsp wholesome oil
- β1 tsp butter
- β1 can (14 oz) coconut milk
- β1 tsp fish sauce (optional)omit for vegan version
- β1 tsp brown sugar
- β1/4 cup Thai basil
- β4 lime wedgesfor serving

Heat oil in a large pan over medium-high heat.

Add curry paste and cook, stirring constantly, for 1-2 minutes.

Add tofu and cook until golden brown on all sides, about 5 minutes.

Add coconut milk, fish sauce (if using), and brown sugar. Bring to a simmer.

Reduce heat to medium-low and cook, stirring occasionally, until the sauce has thickened and the tofu is coated, about 10-15 minutes.

Stir in butter until melted.

Season with salt to taste.

Garnish with Thai basil and serve with lime wedges on the side.
